The harvest of this coffee occurred in June 2023, being the fourth harvest of the crop that is 6 years old, the variety of coffee is Catucai red 785/15, the harvesting process was selective harvesting harvesting only the ripe fruits, the fruits were washed and went through a scavenging where all the green fruits were removed, soon after the coffee went through a fermentation of 8 to 10 days, then it was placed on a canvas for 25 days on average for natural drying, so this coffee had no contact with the soil or moisture, after drying the coffee was 30 days at rest, at the end of this period it went through the processing process, then the beans were sieved in sieves 16 and 17 to standardize the beans, finally the beans went through another scavenging removing all the imperfect beans.
